Brazilian terroir, known for its distinctive and powerful chocolate aromas, is also well known to grow simple and robust coffee trees. The deeper we go in innovation, the more surprises we find in terroir we thought we knew everything about. Henrique Sloper is an amazing farmer, in love with his land and what he produces. This is why we chose the Iapar 59 to represent his work, and how tasteful brazilian coffee can be.
Sweet and balanced, this coffee holds lots of sugar from it’s chocolate base flavors. Throughout the sipping, some fruits will appear, light with a nice citric acidity that will inhabit your palate. It is one perfect coffee for milk based drinks, making you feel like you eat a cake. Brewed in a drip, it is the depiction of a morning coffee, round, sweet, comforting, with light notes of juicy yellow fruits and chocolate ganache

<aside> 🌷 Flavor Profile:
Nestled in the high altitude of Espírito Santo, at 1250m, lies the pioneering Fazenda Camocim. This unique and thriving agricultural estate, spearheaded by Henrique Sloper, stands as a testament to the transformative power of organic and biodynamic farming in Brazil.
Since taking over the farm from his grandfather in 1996, Sloper began cultivating coffee, thus charting a new course for Camocim.
With an unwavering commitment to environmental conservation and soil utilization, the farm evolved into an innovative entity in Brazilian specialty coffee.
In 2017, Fazenda Camocim emerged as the first organic and biodynamic coffee producer to secure a win at the Cup of Excellence, thus changing the face of Brazilian specialty coffee. After two years of transition, the farm officially received biodynamic certification in 2008.
Spanning across 350 hectares of biodiverse forest with 120 hectares dedicated to varied coffee plantations, the Fazenda Camocim of today is a flourishing tapestry of agroforestry.
The farm was initially purchased by entrepreneur Olivar Araújo, a superintendent of Casa Sloper group and one of the founders of Aracruz Celulose, in 1962. He was an early pioneer of organic coffee production in Espírito Santo. For 30 years, Araújo took significant strides to replenish the land, planting and protecting trees, and recuperating the soil.
His successor, Henrique Sloper Araújo, continued the legacy. As the president of the Brazil Specialty Coffee Association (BSCA), he aimed to ensure the farm's autonomy by choosing to produce high-quality organic coffee, free of agrochemicals and agrotoxins. Fazenda Camocim also produces the renowned Café do Jacu, a selection of the best coffee grains from the Jacu bird.
Under the nurturing care of the dedicated farmers at Fazenda Camocim, a unique coffee variety known as Red Iapar 59 has emerged. Iapar name is an acronym from “Instituto Agronômico do Paraná”, which is a “Sarchimor” (crossbreed between Timor Hybrid (832/2) and Villa Sarchi varieties).
This labor of love embodies the best of biodynamic and organic farming practices. By avoiding pesticides and chemical additives, the farmers allowed the varietal's inherent qualities to come to the forefront, resulting in a distinctly clean and vibrant coffee.
Red Iapar 59 Arabica varietal exhibits a delicate yet intricate flavor profile. The notes of rich chocolate harmonize with the sweetness of caramel, while hints of tropical fruit add an intriguing touch of exoticism. Each sip delivers a sensory journey through the nuances of its origin.
The beans, painstakingly handpicked during the harvest season, are a testament to the distinctive characteristics of the Red Iapar 59 Arabica varietal. Their elegant shape and vibrant red hue, in conjunction with their remarkable cup quality, make them a highly sought-after treasure in the realm of specialty coffee. Bathed in the morning sun, these varietals thrive in the shade of agroforestry agriculture, drawing sustenance from the fertile soil and symbiotic relationships with the surrounding flora and fauna.
